When it comes to the foods I eat and prepare, I prefer home grown or home made foods. This meal was my dinner. Luckily, those were all Croatian products, rich in flavor and nutrients. Instead of the sausages, I decided to take the leftovers of broccoli and mix it with lots of dairy products. So, I just put the sour cream on the plate, raw broccoli and covered it with lots of cheese. To spice up, I added lemon juice and acacia honey. To be honest, I was afraid because I had never ate a combination like this. But it was delicious! The acacia honey and lemon juice met perfectly with sour diary flavor which added perfect touch to crisp raw broccoli.
The other side of a medal was also satisfying because I realised that my body will use all of the nutrients I took in this delicious meal.
The first thing that crossed my mind was: " Should I eat a broccoli with that amount of diary products and will I use all of the nutrients from the honey???".
Yes I should, because the broccoli doesn't have that much of iron that my body could loose in a digestion. It contains only 10% of a daily recommended amount, and I have already ate enough of foods rich in Iron today. To be clear, Calcium from the diary products is the chemical that interferes with an absorption of an Iron in human organism. Why is this important to you ?
Iron is a mineral that is naturally present in many foods, or added to some food products (functional foods) and also is available as a dietary supplement. So, let's start with Iron story. It is an essential component of hemoglobin, an erythrocyte protein that transfers oxygen from the lungs to the tissues. Furthermore, iron has two main forms, heme and nonheme. Nonheme is found in plants an iron . fortified foods, whereas meat, seafood and poultry contain both nonheme and heme iron. This is important because human body absorbs heme iron better than nonhem one. This is also a reason why we have to eat meat products!
Iron deficiency is a serious health problem that affects a large part of the population. The most vulnerable are women of childbearing age and children. The most serious form of deficit is reflected in the form of anemia. This is a reduced number of red blood cells due to lack of iron. Symptoms of iron deficiency are fatigue, irritability, poor concetration, shortness of breath, reduced physical ability, reduced immunity, paleness, brittle nails and decline hair.
This all are great reasons to avoid eating spinach with milk. I know, I know. we all love it, but when you eat it prepared with milk, it looses the iron both because of processing on high temperature and interfering with calcium from milk. So, be sure to take it from another foods! Few hours later! :)
Foods rich in iron are liver (but be sure to eat it less or none when you are having a baby because the liver keeps all the toxins from the animal's body), red meat, tuna, soy, legumes, dark green leafy vegetables, yeast, figs etc.
So, just to be clear, there will be no iron for the body from this dinner. :D And the main offender is Calcium. So, let's say something about it!
Calcium is the most abundant mineral in the human body. About 99% of calcium is in the bones and teeth, while the rest of the blood, lymph and body fluids, where in the permeability to cell membranes, blood clotting, nerve impulse transmission, muscle contraction, etc. Together with sodium, potassium and magnesium regulates blood pressure and water balance in the body.
The best food sources of calcium are milk and dairy products, sardines, soy, kale, figs, broccoli and olives. Calcium is a preventive for celiac disease, osteoporosis, rickets, hypertension, hypercholesterolemia, stomatitis, heart disease (increases the contractility of the heart muscle), in prevention and treatment of allergies, depression, hypoglycemia, pain and cramps in muscles and joints, and is often used to treat insomnia and irritability. Due to the lack of calcium during pregnancy can get to preeclampsia, which can develop into eclampsia (edema, headache, nausea, high blood pressure and seizures in the last stages of pregnancy).
As a conclusion, I have had lots of calcium, so I treated insomnia very well with a little help from the acacia since it is found that this particular honey helps with insomnia, nervousness and tension.
